Self-Saucing Jaffa Pudding
OMG this is amazing!!
I only cooked it for the first time about a month ago and the whole family went loopey!! It is totally amazing, you will just love it. If you don’t like jaffa flavour just omit the orange.

1 and 2/3 cups (250 g) self-raising flour
2/3 cup (150 g) cocoa, plus 1/4 cup (25 g) extra
1 tsp baking powder
grated zest and juice of 1 orange
150 ml milk
100 g unsalted butter, melted
100 g milk chocolate, broken into cubes
300 ml boiling water
1 cup (220 g) firmly packed brown sugar
vanilla ice-cream or thick cream to serve
1. Preheat oven to 180 C or 160 C fan. Grease an 8 cup-capacity baking dish.
2. Place flour, caster sugar, cocoa, baking powder, orange zest and a pinch of salt in a large bowl. ln a separate bowl, whisk together orange juice, milk, eggs and melted butter. Pour onto dry ingredients and mix until smooth. Stir through chocolate chunks and pour into prepared dish.
3 Combine boiling water, brown sugar and extra cocoa in a bowl or jug, stirring until smooth. Carefully pour over pudding batter. Bake for 30 mins, until surface is firm and base still gooey. Serve immediately with vanilla ice-cream or your favourite double thick cream.
