Mini Easy Cook Savoury Bites

I am always on the look out for quick and easy lunchbox fillers and afternoon tea solutions. I made up this one the other day by just spooning the mixture in a mini muffin tray.  The kids practically inhaled them so they are now on the app. This recipe can be made in the Thermy and without one. Simply dice and cook onion, grate 1 zucchini, 1 carrot, 1/2 cup to 1 cup of cheese according to taste and whisk up the eggs. Combine altogether and spoon into mini muffin tin sprayed with olive oil.

This recipe is also extra tasty due to the ham I used, which is my glazed ham recipe. Any ham will do or you could use some diced and cooked bacon.

 

INGREDIENTS

1 x onion, diced

1 x zucchini (150 g)

1 x carrots (100 g)

Cheese (70 g)

8 x eggs

ham (200 g)

 

DIRECTIONS
Dice and cook onion until soft.

Cut up into rough pieces the zucchini, carrot and cheese, put into Thermomix and chop for 5 seconds on speed 5-6. Remove, (no need to clean bowl).

Dice ham on speed 5-6 for 2 seconds, remove (no need to clean bowl). Remove.

Break 8 eggs into bowl and whiz up on speed 8 for 15 seconds. Combine all the ingredients including the onion back into the bowl and mix on speed 3 for 10 seconds.

Spoon mixture into mini muffin tins that have been sprayed with olive oil. Cook until set and slightly golden on 180 degrees (around 15 minutes)
