Greek Salad Spoons
What a beautiful way to present a Greek salad. A girlfriend thought of these, she found them in a cook book put out for South Cape Fine Foods called ”crowd pleasers”. They were one of the hors d’oeuvres we made for a girlfriends party! They were a real hit, so refreshing and pretty. Now I make them to go with a roast in summer. We made my 5 hour lamb last night and served with this beautiful salad.
INGREDIENTS
2 tomatoes, finely diced
1 Lebanese cucumber, finely diced
1/2 small red onion
1/2 tablespoon fresh dill, parsley or oregano
1/4 cup extra virgin olive oil
1 Tbsp lemon juice
Sea salt
200 g Fetta, (South cape greek style fetta or danish), crumbled
extra virgin olive oil, for drizzling
DIRECTIONS
Gently toss tomatoes, cucumber, onion, dill, olives, oil and lemon together and season to taste. Serve in Chinese spoons or small shot glasses, topped with Fetta and a drizzle of extra olive oil.
