Chia Strawberry Jam
I used to make a lovely strawberry jam when I had my cafe, I must admit, I haven’t made a strawberry jam since! I have no idea why, when homemade jam is so beautiful. So I decided to make some again, but this time I was keen to add Chia Seeds to the mix as they are so good for you and they are there own thickening agent when mixed with water etc. This is a thermomix version but could easily be adapted by mashing the strawberries and cooking on a stove top. I am also keen to take this a step further (actually a step healthier) and use honey instead of sugar. But this is a beautiful strawberry jam recipe, preservative free.

500 g Strawberries
Zest 1 Lemon
1 Lemon, peeled and quartered
200 g sugar
2 Tbsp Chia Seed (I used white for this one)
Place all ingredients into TM bowl and cook for 35 minutes at 100 degrees on speed 1 or until desired consistency is achieved.
Pour into sterilised jars and seal.
