Chia Lamb Cutlets
I just purchased this amazing brand new cookbook by Nicky Arthur called cooking with Chia. All of her recipes are very simple and use this amazing super food Chia. I contacted Nicky and she was very happy for me to use and share some of her beautiful recipes on my recipe sharing app,Hipcook.
Nicky has recipes using chia in lasagna, chocolate cakes, dips you name it, she’s put chia in it!
I was so excited to find a new way of cooking lamb chops with healthy ingredients. I can’t wait to try all the rest of her recipes!
6 lamb cutlets
1 cup quiona flakes
1 cup flat-leaf parsley, finely chopped
2 sprigs rosemary leaves, chopped
1 tsp parmesan cheese, grated
pinch sea salt
2 Tbsp chia seeds
1/2 cup spelt flour
2 Tbsp virgin coconut oil, for frying
Flatten cutlets with a mallet.
Combine quinoa, parsley, rosemary, parmesan, salt and chia. Pace in a bowl.
Place flour on a plate.
Whisk egg in a shallow bowl.
Coat each cutlet with flour, shaking off excess, then dip into egg, then chia quiona mix.
Heat oil in a frying pan on a high heat. Cook each cutlet for 3 minutes on each side slowly and until golden brown.
