I love looking around on Pinterest and finding new recipes. A lot of the time they are American. Sometimes they work, sometimes they don’t and sometimes I don’t know what the hell they are talking about!! Ok its no secret I am a fan of chicken particularly fried chicken and I am on the eternal search for the best fried chicken recipe ever…. In the meantime this one is really yummy. This original recipe uses skinless, boneless chicken thighs but when I don’t feel like being to healthy I use whole chicken pieces with skin on.
A girlfriend told me about this one and lucky for me I had the same cookbook as her. Its based on a Donna Hay recipe and dead easy and will really impress friends, I promise. By cooking the chicken in stock, it makes the chicken very moist and then in the oven for 15 minutes to crisp the skin.

I have been cooking this one for a few years now and it always goes down a treat. The chicken is succulent and juicy with beautiful flavors and a crispy outer coating.
